Recipe: Smashed Avocado Toast with Boiled Egg + Radish

 

Smashed Avocado Toast + Boiled Egg and Radish 

Great for breakfast, or just a snack to power through a busy day.

Prep Time: 10 minutes | Cook Time: 8 minutes. Makes 1 serving.

 

 

INGREDIENTS:

1-2 Whole Eggs

1 Ripe Avocado

2-4 Breakfast Radish

Salt to taste

1 Piece of Whole Grain Bread

1 lime (optional)

 

 

START by hard boiling eggs or cook to your preferred doneness. For hard boiled cook 8 minutes in boiling water and for a less set yolk cook for 6 minutes. This can be done ahead of time.

TOAST bread in a toaster, or oven until golden brown.

REMOVE avocado from its skin, pull out the seed, and mash in a bowl using a fork. If desired add salt and a fresh squeeze lime juice to taste. The lime juice will also help keep avocado from turning brown.

 

 

NEXT rinse and chop the radish in 1/8th in slices using a knife or mandolin.

 

 

PEEL hard boiled egg and using an egg slicer or knife cut into ¼ inch slices.

 

 

TO SERVE spread smashed avocado on toast and top with sliced egg and radish.

 

 

FINISH with a touch more salt and serve.
