Tell us about the preparation of Michael Angelo’s Eggplant Parmigiana…

I made the entree in the oven - nothing ever ends up as good in the microwave. I also don't like the idea of plastic lying on top of my food for extended periods, so I removed the film about halfway through. It didn't seem to negatively affect the quality at all.

What did you think of the flavor?

This was somehow my first time tasting an eggplant. It itself didn't taste like much; my boyfriend, with whom I decided to share, said it basically served as a healthier version of a pasta base. The sauce is what made it. We added spinach salad and stuffed mini peppers on the side for a veggie-powered meal.

How does Michael Angelo’s Eggplant Parmigiana simplify serving?

This did feel like a healthier alternative to the carb and starch heavy pasta meals that I so shamelessly enjoy. It also felt like that not all my calories were wasted on my entree, I was able to add some variety with my sides.

What makes sit down meals special to you?

A
Even though the prep efforts for this were minimal, it still seemed a little more heartfelt to assemble this meal with my guy, than to order in.
Michael Angelo's Eggplant Parmigiana was a surprisingly tasty diversion from my usual dinner routine.
