The Happy Eggcellent Eggs

In Partnership with Happy Egg Co.

We talked to Betty from KY and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I thought scrambled eggs sounded wonderful. I heated my pan with canola oil and added two Happy Eggs. I seasoned as I would any egg with garlic, salt, parsley, and black pepper. They cooked evenly and were fluffy. They resembled fresh country eggs that we have here. The flavor was EGGcellent. I loved them!
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I think their commitment is great. I am a firm believer that if you want 100%, then you have to give that. The price is in the taste.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
One of our favorite brunches is breakfast burritos. My husband and I have six kids so it takes a lot. 🙂 (1 T. butter, 12 Happy Eggs, 1/4 c. chopped onions, 1 b. cooked drained sausage, 4 oz. shredded cheddar cheese, and 16 med. flour tortilla soft shells). Heat pan over med heat with butter. Add eggs and onions. Cook until eggs are done. Remove pan from heat and add the sausage and cheese. Fold together until mixed evenly. Put on warmed shells and enjoy.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
Some of my favorite things to do are fishing and anything outside. There is nothing more enjoyable!
For a happy day, try Happy Eggs. They are EGGcellent!
