The Good Life

In Partnership with Happy Egg Co.

We talked to Mandie from AZ and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I scrambled the eggs in a pan with coconut oil on medium heat until just cooked (not burnt, not runny). Because I use coconut oil, my food comes away with a slight coconut flavor. After cooking, I sprinkled the eggs with a dash of Pink Himalayan sea salt to taste. My eggs were fluffy yet delicate.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I'm well-pleased to know the hens have 8 acres on which to graze and wander during their egg-laying years. Quality of life is important for any and all animals, regardless whether they are pets or livestock.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I love my eggs with crumbled bacon, coconut oil, and a pinch of sea salt. Simple ingredients for a delicious, nutritious breakfast.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
We love hanging out, eating, playing games, and spending time outdoors.
These are delicious, fluffy, happy little eggs!
