Tell us what you made with your Happy Eggs!

A
I made scrambled eggs for myself for dinner. I didn't use milk when mixing the eggs before putting them in the pan like I usually do. I melted about 1 tsp. of Land-O- Lakes butter, then added three beaten eggs. While they were cooking I added a dash each of salt & pepper. When the eggs were cooked through, I added half a slice of muenster cheese and one whole slice of cheddar cheese before putting the eggs on a plate. They were very good, I typically like brown eggs better than white eggs and these did not disappoint. Not sure how to describe how they taste it other than to say they were very deliciously eggy.

How do you feel about The Happy Egg Co.’s commitment to hen welfare?

I can honestly say that hen welfare has never crossed my mind before this. But as with most things, I'm sure that happy hens make better eggs!

Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I make this really good egg casserole and then serve it with a frozen fresh melon medley every year for my kids & their friends the morning after the last sleepover before school starts. For the casserole can you layer a cake pan with bread, cheese, bacon, more cheese, and sausage then you pour the eggs, which have been mixed with milk and Worcestershire sauce, over the layers in the pan, cover it and let it sit overnight in the fridge, then you bake it the next morning and add more cheese on top, of course. It goes really well with the frozen fresh melon medley & fresh OJ. It's become a tradition that we love & it's super delicious!

Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I love doing anything with my family, especially camping and hiking (which are two things I used to I hate doing at all). There's something to be said for communing with nature while spending any precious time you can with those you love. I know all too well that you can lose everything in a heartbeat for no reason and never see it coming, so I've learned to enjoy every second that I get to spend with the people that matter to me.
Happy eggs are a happy, healthy and delicious addition to any meal.
