Simply Kind

In Partnership with Happy Egg Co.

We talked to Katelyn from OR and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I prepared two eggs soft-boiled and served them in a miso broth, both sliced in half. I had this meal as my dinner for the evening. The eggs themselves are most distinguishable from my standard store brand by texture. The texture of the egg was immediately more creamy than I am used to, and the whites were significantly less rubbery. I plan to eat the rest as stand-alone hard-boiled eggs because of this and the more distinct flavors that I believe them to have. I found them akin to the taste of fresh farmers market eggs that I've had in the past.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
The intent of Happy Egg Co. very similarly aligns with my personal beliefs and I hope for and wish them success in their endeavors.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I'm partial to simple. A carefree, diced, hard-boiled egg tossed over a nice summer salad is always an ideal and a great way to enjoy a simply healthy lunch.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
In the warmer months a chill dip in a lovely Oregon lake or rough and tumble rush down some white water rapids always brings my summer to its fullest.
Happy Eggs are a lovely way to bring some farm-fresh happiness and daily wellness into your life.
