Tell us what you made with your Happy Eggs!

A
I made Ketogenic coconut flour pancakes using eggs. Eggwhites turned out really fluffy. I used the eggs by separating the yolks and the whites, whipping up the whites with a little salt, and then mixing the yolks with almond milk, coconut flour, baking soda, and coconut oil. Flavor was excellent.

It makes me feel more willing to pay more for eggs. I’ve seen documentaries showing hens in horrible conditions.
