Not Your Ordinary Egg

In Partnership with Happy Egg Co.

We talked to Deidra from NV and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I boiled 2 Happy Eggs for lunch. I prepared half of one egg by dicing the boiled egg as a topping for a green spinach & tomato salad. Then the 1 1/2 boiled eggs left over, I also diced and then mixed with mayonnaise and salt and pepper to make an egg salad sandwich on wheat bread. Flavor was great! Yolk almost had a creamy texture and was very light. Boiled perfectly to a nice yellow color. No gray.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I love what The Happy Egg Co. stands for and represents as a company. In an age where animal cruelty is rampant, it is refreshing to see this.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I've been seeing burgers topped with a fried or sunny side up egg everywhere lately! The creamy flavorful eggs would make Happy Eggs perfect for this! I am definitely going to give this a shot in a few days in Fourth of July!
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
During the summer, we love pool days, s'mores, crafts, and walking the dogs in the evening as some of our favorite activities. I think we can find enjoyment in just about anything we do because the main goal for us is just being able to do it together, no matter the activity.
