Tell us what you made with your Happy Eggs!

I scrambled the eggs with a little salt and pepper. We really like scramble for over medium eggs. The flavor was good; no one knew they were brown eggs.

I can appreciate providing loving care for the animals. My parents raise farm animals and treat them very well.

Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
Ingredients: 1 avocado; 6 hard-boiled eggs; 3/4 cup grape tomatoes cut in halves; 4 strips of bacon cooked until crispy; 1/2 cup green onions, chopped; 2 tsp. garlic powder; 1/2 tsp. sea salt to taste. Instructions: Make your hard-boiled eggs. Once done, peel, set aside in the refrigerator, and let cool. While they are cooking, make bacon using your desired method and cook until crispy. In a medium bowl, combine eggs, avocado, garlic, and salt; smash with a fork until combined. Add in bacon pieces, tomatoes, and scallions. Mix well. Taste and add additional salt and ground garlic as desired. Serve over fresh spinach or lettuce or in lettuce wraps!

My family really likes playing games, swimming in the pool, and going to state parks to hike.
Happy Eggs have a great taste and I love knowing the animals that produce them are well loved and taken care of.
