Happy Eggs Make Me Happy

In Partnership with Happy Egg Co.

We talked to Teresa from OK and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I made egg salad and it was delicious. I started by hard boiling 6 eggs, let them cool and chopped them. Then I added 1/4 c. chopped green onions, 1 tsp. prepared mustard, 1/3 c. mayo, 1/4 tsp. paprika, and salt and pepper to taste. The eggs had a good taste to them much like the farm-raised eggs I had when I was younger. Best egg salad I ever made.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I really appreciate companies that provide high-quality organic food. I like to provide food for myself and family that is free of pesticides and other chemicals. Raising hens in a humane way is important to me.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I would make chilled egg salad sandwiches with home-grown tomatoes. They are a perfect slice of summer.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I enjoy cooking and sharing the food I make with others because good wholesome food makes people happy.
The taste of Happy Eggs reminds me of the farm-raised eggs my mother fixed when I was a child.
