Happy Eggs Keep Allergies Happy, Too!

In Partnership with Happy Egg Co.

We talked to Kristen from FL and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I used two of the eggs (scrambled) to make an omelet. I put frozen spinach, goat cheese, and cooked baby bella mushrooms and poured the eggs on top to cook the omelet. I’ve tried many brown eggs and these were to the standards of the best I’ve had thus far. I enjoyed it!
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I think it matters a lot because the animals’ happiness goes into their eggs. You can really taste the difference between something that is cared for and something that is not. Also, my compassionate heart does care for the way that animals are treated in general.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
With the eggs, I would make a delicious cheesecake to share with family! My birthday is coming up and that is my favorite dessert so I would make the crust out of a gluten-free brownie mix and use the eggs for both the crust and the inside mixture of cheesecake with some delicious organic cream cheese.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
With my friends and family, I really enjoy going canoeing or kayaking down a river. Also, I love talking, eating together, playing board games, and playing card games.
Happy Eggs add a genuine smile a day!
