Happy Eggs for a Happy Mom!

In Partnership with Happy Egg Co.

We talked to Amy from CA and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I scrambled a couple of eggs with a little bit of butter and salt and pepper. I then ate them as an egg sandwich, because I'd been craving that for a while now. The eggs came out really fluffy and the flavor was delicious.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I don't usually buy free range organic eggs because of the price, but I am starting to realize that they are worth the price. I love knowing that these eggs are not coming from chickens who have been tortured and fed chemicals. I am very happy with what The Happy Egg Co. is doing and love that they are available to me at my local Walmart.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
My favorite dish that includes eggs is my chiles rellenos a recipe I learned from my father. These are stuffed pasilla peppers that are then coated with egg. The flavor is so rich that it would pair perfectly with these fluffy eggs and I can see myself serving this dish to my husband on a hot summer night.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I love taking walks with my husband and friends. I also really enjoy watching movies and visiting book shops.
Happy Eggs are delicious, healthy, and cruelty-free source of protein that fit right in to my family's needs
