We talked to Kim from Tallahassee , FL and here’s what she had to say:

Q: Which Happy Egg Original Recipe would you like to try? (All Happy Egg Recipes can be found at )
A:  The Italian Fried egg and Portabella Burgers recipe really caught my eye because I like using portabellas as a tasty alternative to beef. The title sounded so good I had to check out the recipe on the website. The picture of the egg with the rich yellow yolk on top made my mouth water. I will definitely be making this in the very near future but I will use both the peppers and the tomatoes (and the basil is a must, not an option! 🙂 )
Q: What was your first impression of the packaging?
A:  The bright yellow carton caught my eye. However, the labeling looks somewhat “busy.” It may be the font of the larger letters.
Q: How did you prepare your Happy Eggs?
A:  I made a simple omelet with thinly sliced onions and fresh mozzarella.
Q: What do you think about Happy Egg’s commitment to providing environmentally-friendly eggs?
A:  I try to buy organic as often as possible. I appreciate no use of hormones, pesticides, or antibiotics. The flavors are fresh and clean.
