Happy Eggs Chronicles

In Partnership with Happy Egg Co.

We talked to Kari from FL and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
My children and myself cooked some scrambled eggs. We whipped the eggs, milk, salt, pepper, and parsley together. Threw some butter in a skillet, poured in the eggs, and folded them over each other until they were done. I sprinkled parmesan cheese over the top. The egg tasted fresh and healthy. Excellent flavor.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
It makes me happy to see a growing company sticking to their morals instead of jumping on the bandwagon to cut corners to earn more profit. We need more companies that hold true to their name.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I would make deviled eggs with relish and pimientos. The best way to show the flavor of an egg is to make it the star. My mother loves pimientos. I would also make tuna salad with boiled eggs. The freshness from the eggs will make the tuna salad pop. It is the all-time favorite meal of my grandfather and my dad.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
We enjoy going to the beach and getting a sun tan and building sand castles. We live on white sandy beaches -- what more can you ask for? We also enjoy camping in the winter, having a fire with colored ash, and making hotdogs and smores. It's a great family activity to spend real quality time together.
Eat Happy Eggs to put a smile on your children's face!
