Happy Chickens Make Happy Eggs

In Partnership with Happy Egg Co.

We talked to Michelle from PA and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I made scrambled eggs. Scrambled eggs are something that my children eat very often. I wanted to see how these eggs would work for scrambled eggs. They were great! Cooked them with just a little salt and pepper as I usually do and they were light and fluffy the way we like them.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I think it is great. I like companies who are concerned about more than just making money.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I would make a garden vegetable quiche. The zucchini, eggplant, tomatoes, and peppers are starting to come in right about now. Pair those with some swiss cheese, basil, and parsley from my herb garden. Place in an unbaked pie crust and top with a mixture of Happy Eggs and cream. Bake for about an hour. This would make a great brunch dish to share with my family on a Sunday morning after church. The great thing about quiche is you can make it ahead. It's fabulous both hot and cold.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I love cooking with and for my family and friends. I have great memories of cooking with my mother and grandmother. That is why I continue to cook and am teaching my children to cook as well.
Happy Eggs from happy chickens make me happy.
