Happy Body, Happy Heart

In Partnership with Happy Egg Co.

We talked to Cassandra from CA and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I prepared my eggs by sautéing mushrooms and spinach and adding two of the eggs and scrambling them. I finished it with salt and pepper and put my scramble into a whole wheat pita. The flavor of the eggs was very fresh.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
Being able to purchase eggs that I know came from humanely-treated hens is invaluable. I love that they are making a difference in this way. I think it makes the eggs taste even better.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I love a great egg salad and cold salads are perfect for summertime. When I make egg salad, I like to keep big chunks of egg intact and I add relish, Dijon mustard, and finely chopped shallots. It's very versatile and can be easily incorporated into a sandwich or as a side dish.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I love spending time at the beach, whether that's strolling along the boardwalk or lounging in the sand. Good, quality time outside is essential to me and my family.
Eating a high protein breakfast after my daily workout makes my body feel good, but knowing my eggs came from Happy Egg chickens makes my heart feel good.
