Tell us what you made with your Happy Eggs!

A
I hard-boiled this purchase of Happy Eggs for an egg salad. I covered them with water and brought them to a boil and let them cool for 10 minutes. They were easy to peel and the yolk was a bright yellow. I chopped the eggs and mixed them with chopped celery, Cajun seasonings, roasted garlic, chopped radish, chopped dill pickles, mayonnaise, yellow mustard and creole mustard. I added a little black pepper and dried basil. We made egg salad sandwiches with butter lettuce and pumpernickel bread. A few of us added bacon and hot sauce to our sandwiches also. They were delicious and I will be purchasing them again.

How do you feel about The Happy Egg Co.’s commitment to hen welfare?

It’s very important to me that animals are treated with respect no matter what. I am willing to pay more and travel farther to purchase products that are committed to animal welfare standards. I feel like you can taste the difference when an animal has been raised in a stressful situation. If we are going to eat animal products, then we ought to respect their sacrifice and treat them with care and consideration.

Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

I’m going to make a frittata with roasted summer vegetables and fontina cheese next. If I have any eggs left over I will also make some fresh picked blueberry muffins with lemon streusel.

Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
One of my favorite things is to go tubing or laze around the beach with friends (minus our cell phones!) in the summer. It’s important to relax in nature and take time to calm things down a bit.
