Tell us what you made with your Happy Eggs!

I bought these right after a workout so I was seriously in need of some protein. I came home and made some over hard eggs that I cooked in avocado oil and then topped with cracked pepper and pink Himalayan salt. These eggs were so great that I’m actually cooking another one as I type this.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

I’m totally for it. I usually buy pasture-raised eggs and I was a little bummed that my Fry’s didn’t have the organic version, but I support companies that strive to be kind to their animals.

Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
Oh dang, deviled eggs come to mind…but that’s so overdone. I’d probably do my rendition of egg salad, but I like to mix in Dijon mustard and mashed avocado instead of mayo. I add chives, cornichons, celery, and Italian parsley with a hefty amount of garlic powder, cracked pepper, and a little salt.

Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I love going to museums with my boyfriend and daughter. It’s a fun way for us to experience new and exciting things together. And it’s too hot to spend time outside (we live in Arizona) during the summer, so it’s also a nice cool activity.
I thought these eggs were tasty and they were made even more delicious knowing they came from a company who cares about their chickens!
