Eggs For All

In Partnership with Happy Egg Co.

We talked to Katelin from NM and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I baked banana bread with these eggs, and they made the bread very light and fluffy. I was happy with the consistency when mixing the ingredients. However, I didn't check the eggs in the package before I bought them, and one of the eggs is cracked.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
I think that's great. I'm lactose intolerant and allergic to most eggs, but because these are free range and organic, I can eat them. I'm glad this company has taken up a concern with our eating habits.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I will likely make some custard or meringue with these eggs, as they have a very nice consistency. I have a online baking page and post all my baking creations on there.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I like to light off fireworks with my boyfriend. He likes the loud ones and I like the colorful ones.
These eggs made my stomach happy and I'm fairly certain it's because they came from happy chickens.
