Eggcellent Eggs

In Partnership with Happy Egg Co.

We talked to Marsha from CA and here’s what she had to say:

Q
Tell us what you made with your Happy Eggs!

A
I boiled three eggs for ten minutes to make them hard boiled. After peeling them, I cut them in half. I prepared them to be served atop our dinner dish, which was a coconut chickpea curry. The flavor was very good and the yolk was not dry.
Q
How do you feel about The Happy Egg Co.’s commitment to hen welfare?

A
It is very commendable of Happy Eggs to care for their hens in such a way. I think it is very important for animals to be raised with compassion and in a caring environment.
Q
Get creative! What yummy summer recipe would you choose to incorporate Happy Eggs with?

A
I would choose to incorporate Happy Eggs into a family favorite recipe: chili cheese quiche. This dish requires nearly a dozen eggs and is perfect for church potlucks.
Q
Happy Egg Hens spend their days doing things they love [like perching, foraging + dust bathing]. What are some of your favorite things to do with family + friends?

A
I enjoy eating with my family since mealtimes are when everyone gathers together. Likewise, I enjoy celebrating holidays and birthdays because everyone is gathered together, which is most important to me.
I was delightfully surprised at the delicious flavor of these eggs; I am now happy.
