Dressed Up | 3 Ways We’re Using This New Chickpea-Based Pantry Find

Our office is on a consistent hunt for that go-to lunch salad we can prep for the week and not grow weary enjoying. While some might find it therapeutic to whip up veggies in the kitchen, sometimes that DIY salad doesn’t do the trick. Plus, finding a healthy + delicious dressing is a true win, especially when you’re on the go and need a back-up to rely on.  

We recently picked up O’dang’s newest hummus dressing lineup with our daily dose of greens x they’re killer. One of our contributors decided to take our latest flavor of choice for a spin + she now has these three simple Mediterranean dishes on rotation:

 

 

01 | Mediterranean Chopped Salad:

  • ¼ cup olive oil
  • 2 heads romaine lettuce chopped, about 6 cups
  • 1 cup grape tomatoes
  • 1 cup cucumbers chopped
  • 15 ounce can chickpeas drained and rinsed
  • ¼ cup red onion finely chopped
  • ¼ cup kalamata olives pitted, sliced
  • ¼ cup feta cheese
  • 1 tablespoon parsley chopped
  • O’dang Hummus Dressing

02 | Mediterranean Steak Bowls:

  • 1 lb. flank steak [sub NY strip or sirloin steak]
  • 1 pint [10 oz.] grape or cherry tomatoes
  • ½ medium red onion, peeled and cut into 1-inch pieces
  • 1 head romaine lettuce, chopped [~10-12 cups]
  • 1 large cucumber, chopped
  • ⅓ cup pitted kalamata olives, sliced
  • 1 cup garlic hummus [or store-bought hummus of choice]
  • ½ cup crumbled feta cheese
  • Skewers for veggies
  • 2 tsp. oil of choice [such as avocado oil or olive oil]
  • Lemon wedges and/or torn fresh mint leaves for garnish [optional]
  • O’dang Hummus Dressing

03 | Mediterranean Pasta Salad:

  • 12 ounces dry pasta [farfalle is my reco]
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced kalamata olives
  • 4 ounces crumbled feta cheese
  • half of a medium red onion, peeled and thinly sliced
  • O’dang Hummus Dressing
