I know every reader out there was aware that is August is Panini Month. How could you be unaware of such a momentous celebration!? I will be the first to admit that the impromptu Holidays are getting a little excessive, but who can’t help but join in on a month dedicated to melted cheese grilled between a yummy carb of choice? I’ve gathered 9 of my top Panini creations to try this month—the best thing about these recipes is that they are quick enough for a lunch, but you can also dress them up a little bit and have a filling dinner. Win win!

Caprese Panini

Tomatoes are in season in August, which means you need to make the most of it and put them to use in a Caprese Panini! Layer pesto sauce on 2 slices of Italian bread, then top with thinly sliced tomato and Kraft slim cut mozzarella slices. Perfection!

Pesto Turkey Panini

I love any excuse to use pesto! For this recipe, spread pesto sauce on the bread of your choice, and follow with a layer of turkey breast, Kraft Mozzarella slices and fresh cut tomato slices. Cook it, and serve with a fresh caesar salad! Voila!

Roast Beef & Swiss Panini

I love using this panini recipe as an option to give new life to my leftovers. I’d personally serve this with a side of baked beans or potatoes, but that’s just my humble Southern opinion.
